Malabsorption of food & unable to retain

My 50-year-old mother is experiencing an overactive gastro-colic reflex and rapid intestinal transit, causing an urgent need to pass loose, unformed stools almost immediately after consuming meals with medium spices, heavy oils, or outside food. She experiences a feeling of nutrient malabsorption and general weakness during these episodes, but her bowel habits normalize completely into well-formed stools whenever she rests and adheres strictly to a home-cooked bland diet. She currently does not exhibit any major red-flag symptoms such as a high-grade fever, severe localized abdominal pain, visible blood in the stool, but she definitely had some sudden weight loss and her cheeks look so flat and in pain it seems. What is the problem and how to rule out Irritable Bowel Syndrome (IBS-D) or food intolerances.

Stomach infection

Around a week ago, I had a high fever and diarrhea. I was treated with ORS and plenty of fluids. The fever subsided, but I continued to experience a stomachache, slow digestion, foul-smelling gas, and less frequent diarrhea. My doctor prescribed a course of probiotics, which I completed, but it didn't provide much relief. After that, I took Norfloxacin for three days, which also had little effect. Currently, I started taking Metrogyl 400. I took a dose last night and felt relief from my stomach cramps this morning. Since I am prone to constipation, I would like to know the exact dosage and duration?

I was prescribed Esogress-IT before breakfast and Esogress-D before dinner. I am taking Pentate-IT (pantoprazole + itopride) instead of Esogress-IT. Is it safe to take Pentate-IT in the morning and Esogress-D in the evening for 10 days, since both contain PPIs?

My mother age 48, is facing watery stools issue from 10 days going 3 times daily, no pain or weakness but lost about 4.2kg . The last checked weight is 15 days back which is 95 and now it's 91.8 . She has osteoarthritis and also done root canal recently, kindly advise
