1) GREEK YOGHURT TUNA SALAD: Ingredients -
- 1/4 cup plain greek yogurt
- 1 tbsp mayo
- 1 can of tuna
- 2 stalks celery, diced
- 1 small apple, diced
- 1 tsp chopped onion
- 1/4 tsp garlic salt
- salt & pepper
- lemon juice
- Chop the apple and celery. Add to a bowl
- Then drain tuna and add it to the bowl.
- Now add 1/4 cup of greek yogurt and 1 tbsp of mayo to the bowl.
- Add spices, salt & pepper, and lemon juice.
- Mix thoroughly and serve.
2) CHOCOLATE CHIA SEED PUDDING: Ingredients
- 1/4 cup cacao powder or unsweetened cocoa powder
- 3-5 Tbsp maple syrup
- 1/2 tsp ground cinnamon (optional)
- 1 pinch sea salt
- 1/2 tsp vanilla extract
- 1 1/2 cups light coconut milk
- 1/2 cup chia seeds
- To a small mixing bowl add cacao powder (sift first to reduce clumps), maple syrup, ground cinnamon, salt, and vanilla and whisk to combine. Then add a bit dairy-free milk at a time and whisk till a paste forms. Then add remaining dairy-free milk and whisk till sleek.
- Add chia seeds and whisk once more to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it's achieved a pudding-like consistency).
- Leftovers keep covered in the fridge for 4-5 days, though best when fresh. Serve chilled with desired toppings, like fruit, granola, or coconut topping.
