I'm planning to restart Gym, running, workout etc. I felt it would be better if I did a checkup of Vitamins, calcium, iron etc. Could anyone help me with this? Which test should i take, should i consult a doctor before or after etc.

A baseline health check before restarting workouts is a good idea. I recommend CBC, fasting blood sugar/HbA1c, lipid profile, LFT, KFT, TSH, urine routine, and a resting ECG. Vitamin D, B12, and iron studies should be done only if you have symptoms or risk factors.
