Amaranth Kheer needs common ingredients such as milk, ghee, sweetener and dry fruits. To make it more mouth-watering, add a bit of cardamom powder. This sweet Indian recipe is a cuisine which is perfect for every age group.

Ingredients for Amaranth Kheer

  • Amaranth 2 cups 
  • Milk 4 cups 
  • Almonds sliced 10-12 
  • Pistachios sliced 10-12 
  • Raisins 2 tablespoon 
  • Dried coconut grated 1 cup 
  • Stevia/ Caster sugar (½ cup) 
  • Green cardamom powder ½ teaspoon

Amaranth Kheer Recipe

  • Take a pan, add milk and boil it. Simmer it for 15 minutes on low flame and stir it continuously until the milk thickens. 
  • Take a non-stick pan, heat ghee and add some raisins, almonds, and pistachios. 
  • Allow it to sauté for 2-3 minutes. 
  • Now add amaranth in the pan on low heat and allow it to sauté for 3 minutes.
  • Add milk into the pan and allow it to cook for 5-6 minutes. 
  • Add cardamom powder and stevia or castor sugar (as per taste) and mix them well. Allow it to simmer for 7-8 minutes.

Serve the Amaranth Kheer hot, warm or chilled. You can garnish it with sliced almonds, cashews or with saffron strands.
