Winters are the times when you are most vulnerable and prone to sickness. A nutritious bowl of soup helps you stay comfortable and healthy in this cold weather. 

A soup can be a quick snack or a filling meal in itself. Here are 3 easy as well as nutritious soup recipes that will not only keep you snuggly but also in the right shape.

1. Vegetable Soup

When in doubt, just make a sweltering bowl of vegetable soup and you are good to go!

Ingredients:

  • Olive oil: 3 tablespoons

  • Spring onion: 2 (green part only)

  • Onion: 1 (medium size)

  • Garlic: 4 cloves

  • Carrots: 4

  • Pumpkin: 1 (small)

  • Tomatoes: 2 (medium size)

  • Fresh oregano: 2 teaspoons

  • Ground black pepper: ½ teaspoon

  • Spinach: 2 cups

  • Salt: To taste

  • Vegetable stock (water in which vegetables are boiled)

Directions to Make:

Step 1: Heat oil in a large pan.

Step 2: Add spring onions, crushed garlic, and chopped onion and let it cook for a few minutes. Then add the carrots and pumpkin and cook until tender.

Step 3: Add the vegetable stock, and bring it to a boil.

Step 4: Once the soup starts boiling, add chopped tomatoes, spinach, and oregano. Add pepper powder and salt to taste.

Step 5: Let the soup simmer on low heat until the vegetables are tender. The soup is ready. 

2. Carrot And Sweet Potato Soup 

This soup is super simple and has all the ingredients that make it an all-time winter winner.

Ingredients:

  • Olive oil: 2 tablespoons

  • Sweet potatoes: 3 (medium size)

  • Carrots: 4 (small size)

  • Onions: 2 (medium size)

  • Garlic: 2 cloves

  • Salt: To taste

  • Vegetable stock

Directions to Make:

Step 1: Heat the pan and add sweet potatoes and carrots which have been cut into medium-sized chunks. Season with olive oil and salt. 

Step 2: Roast the vegetables till they are tender and caramelised.

Step 3: In a separate pan, add olive oil and fry chopped onions.

Step 4: Add crushed garlic and stir for a minute and then add the vegetable stock. Cook for five minutes till the onions turn very soft, then keep them aside.

Step 5: Take a fresh saucepan and use a hand blender to blend all the ingredients to make it into a thick smooth soup. You can also add fresh cream to enhance the taste.

3. Mushroom Soup

This soup is creamy, warming, and full of nutrition. Mushrooms contain fibre and many vitamins and minerals to support the body, including B vitamins and potassium.

Ingredients:

  • Butter: 25g

  • Onions: 1 (medium size)

  • Green pepper: 1 (medium size)

  • Spring onion: 1 (green part only)

  • Garlic: 1 to 2 cloves

  • Mushrooms: 300g

  • Plain flour: 2 tablespoons

  • Milk: 450ml

  • Chopped parsley:  1 tablespoon

  • Ground black pepper: ½ teaspoon

  • Salt: To taste

  • Vegetable stock

Directions to Make: 

Step 1: Start by melting butter in a pan and add chopped onions, green pepper, spring onions, and garlic. Cook until they start to soften. 

Step 2: Add the mushrooms to the pan, stir until well combined. Continue to fry till the mushrooms are cooked. 

Step 3: Remove the pan from heat and add the vegetable stock little by little.

Step 4: Once all the stock is added, return the pan to the heat and let it boil by keeping it on a low flame. 

Step 5: Pour milk and add chopped parsley, freshly ground black pepper, and salt to taste.
