Hey, I understand it's a very difficult situation for you. And honestly very smart of you to not stop medications on your own. The medicines which you have been prescribed take time to work. So, give it a week. The medicines are not much over prescribed. The doctor must have assessed the patient's condition and then gave the antipsychotics. She will get out of it, do not worry. Right Treatment at the right time always helps.
Next Steps
You can always take a 2nd opinion if you are not satisfied, just don't stop medications abruptly. After taking 2nd Opinion you can then choose and proceed forward.
Health Tips
In this time, you can support her by making her eat good food and giving her medicines on time. I can understand this is difficult for you too, but little patience will help your mother and you.

This sounds like an acute psychotic episode, which can be very frightening but is treatable and often reversible. • In the initial phase, doctors sometimes prescribe more than one antipsychotic short-term to control severe fear, sleeplessness, and hallucinations. This is not necessarily over-prescribing, but it must be reviewed closely. • Do not reduce or stop medicines on your own. Sudden changes can worsen symptoms. • A second psychiatric opinion is reasonable, especially to simplify medications once she stabilizes. • Yes, many patients recover well, especially when treated early. How you can support her: • Stay calm, reassure her that she is safe. • Do not argue with her beliefs or voices. • Ensure medicines are taken regularly and sleep is protected. • Seek urgent help/hospitalization if she becomes unsafe, very agitated, or refuses medication. With proper care and follow-up, there is good hope of improvement.

It would have been good if you added duration of these symptoms, episodic/continuous, substance use, past history of psychiatry consultation Doctor started her on antipsychotics. but if you are worried about multiple drugs talk with your doctor, so that he will explain you in detail. Yeah with treatment your mother can recover. But she needs to take medicine, don't stop.
