It is possible to answer your question only after assessing your muscle power. You should consult an expert physiotherapist for complete assessment or your physiotherapist who have been treating you so long.

Weight of the bike is not important  unless u going for high speed n may have chance of injury but as far as your knee rehab is concerned  ur physiotherapist will the good person to guide you as he/she is aware of your muscle strength  n knee restoration n your improvement
Next Steps
follow your orthopedic  doctor n your physiotherapist 's advice as they are the best judge of your condition .but u can always have second opinion  for your satisfaction

You mean you are performing exercises by yourself... hard to know if your exercises prepare you to twist? Visit a physiotherapist for looking at your exercises, examine the knee and provide you good advice
