My father has been diet since a few months. It goes like this-
Soaked raisins and 1 fig in morning
1 coconut water
Upma and chutney as breakfast
Daal/sabzi as lunch
Papaya shake/cheeku shake
Night 1-2 chapatis or bowl of daliya with more green sabzi
Is this enough? Or should we add something.
Whenever we add paneer, he gets constipation.
He has chronic constipation so we added fruits/veggies. It helps but he still takes oral magnesium for softer stool.

Add 1tsp triphala powder at bedtime with normal water 2 to 3 days in a week. If he is not diabetic then give 5 to 6 munakka after both meal .

This diet lacks in protein. Taking protein quantity wise is not enough but you should take protein quality wise means all amino acids ( absorbable form of protein in the body) needs to be taken in right quantity nutritionally also diet seems imbalanced wee need to discuss on the call. If aim is to reduce weight then reduced quantity of food is not going solve problems infact he should take right food in right quantity at right time with daily physical activity , daily undisturbed good sleep, daily stress management activities
All together will be able to resolve his issues, single thing will not work.

Firstly I need full day diet along with serving size.
Secondly need to increase protein intake.
Thirdly you can give tofu / ragi for the / soybean for the protein intake as well as calcium intake.
Fourthly need to increase soluble fiber to relieve constipation.
