Hi I would like to know if adding wheat gluten for baking bread and cake good for health (especially for kids and older people). What is the health benefits/ risks of consuming this?

Hello, It is not necessary to add. If the person is gluten intolerant only then use it, or there can be tolerance problems in non- intolerant individual.

Only if person in gluten intolerance they have to avoid gluten that one type of protein which is in wheat.  So dont avoid unless you are allergic or intolerant.
