Protein denaturation
On an average how much percentage of protein gets denatured when we boil/cook raw foods like split peas,grams,soya beans etc. Thank you.

It depends on type of food we r cooking and time elapsed. But one simple fact is food seems hard when protein is not cooked. So most foods that taste better are having more denatured protein..
