Ayurvedic medicines work differently according to their rasa, veerya and vipaka. This goes with amla too.

Here Amla rasa is not acting.The action maybe any one of guna,veerya,vipaka,prabhava or it's combined almost all the drug action is due to its veerya.

Yes amla is acidic in nature but causes suppression of pitta as it is cool in nature!
In AYURVEDA some drugs act by its ras ( eg. Amla ras)/some by veerya( hot Or cool) some by vipaka( madhur amla)!!
Its work depends on which is dominant to what!
There are many exceptions like amla!
Like buttermilk is expected to be cool but its actually hot in nature!
But it works by its vipaka( after digestion becomes sweet) hence acts on pitta!

You can consider some exceptions. Amla is a unique, wonderful and exceptional drug, it has all 5 tastes except salt. And a cool or acidic nature is mainly assessed based on its action on our body and based on its property.

Amala is unique it has all Rasa except Lavan (salt) so called Alavana i.e. salt less
