Vata pitta and kapha is sharirika tridoshas. The health of the body depends on them. If they are balanced in body than only body is healthy but every individual is different. It's called prakriti in ayurveda which makes them different from each other. Which means in every individual one dosha Is dominant than other doshas. As per your question it seems your pitta dosha is one of the prakriti dosha for you. And it can't be removed from your body as all three doshas are necessary. But if your prakriti is paitika than you have to give more attention to your life style as your intakes and your living habits can increase and decrease doshas. So avoid pittavardhaka ahara like sour, salty, oily, ushna (the food which is garam in tasir) etc. Avipattikara churns is good but it will help after life style changes. And other thing, the characteristics of your stool suggest you might have indigestion and which causes aam that's why your stool is sticky and all, Avipattikara churna will help in that too but you need light, less oily, easy digestive food.

Virechan is a good way to flush out pitta but I would suggest to consult before going for it as pre and post karmas needs to be strictly followed and you also need to know about your body's prakruti.
