Maida, is nothing but refined flour. We would always try to avoid the refined flour as much as we can, but if we have a few recipes which just demand for the refined flour, we always opt for the one which we can try making at home, that is sieving the wheat flour once or twice, is a much better option than the refined flour which we get in the market which is way more processed. But restricting the maida as much as possible is the ideal option.
