First of all amalgam fillings are outdated.
They are mechanically bonded and usually have marginal leakage and chances of secondary caries increases...
So my advice is to go for replacement filling with more advanced tooth colored fillings names composite restorations.
Do not worry about mercury now... better take appropriate action to replace.

Yes during removal it will get contact with water spray and high vacuum evacuation will also increase mercury content
