Idly and Dosa are considered super food since they are fermented and contain probiotics. But idly and dosa are cooked at high temperatures after they are fermented. Do the probiotics cooked in high temperature stay alive?

yes, they are bacteria which become alive once at ideal temperature, otherwise they remain sleeping(dormant)

Healthy morning, Foods with probiotics requires certain temperature control. Exposing live probiotics culture to temperature above 115 degrees F kill them. The favourable temp for growth of most probiotics is in the range of 37- 43 degree Celsius. However, some thermal processing will result in a major loss of cell viability, thus compromising its functionality.
