Foods with probiotics requires certain temperature control. Exposing live probiotics culture to temperature above 115 degrees F kill them.
The favourable temp for growth of most probiotics is in the range of 37- 43 degree Celsius. However, some thermal processing will result in a major loss of cell viability, thus compromising its functionality.
