And except peanut,roasted peanuts, paneer what can she eat as a chewy protein?
In Ramzan when she eats protein she needs to go to the loo.

You may add sprouts in your diet.. but if she has digestion problem then consult with your Physician.
For healthy snacks she may take almonds, makhana, 2 egg white,khakara.
There are no any alternative for sugar, but she is diabetic she has to quit sugar.
According to me protein and fibre content increase in ur diet but carb product reduced and use complex carbohydrate.... And use low glycemic index food.
Please use rock salt and roasted cumin seed powder that will help to change of taste sometime
And change sugar will depend upon on her recent level of fasting and pp sugar
