Hi I would like to know if adding wheat gluten for baking breads and cake good for health (especially for kids and older people). What is the health benefits/ risks of consuming this? Consumption would be maximum 2-3 tablespoons per week.

Refining the food decreases its value. The more raw and natural a food is the more benefit it has. Even for gaining protein. Balanced diet is more important than adding wheat gluten if u want to increase protein intake then take more pulses.
