Dry and itchy throat

Initially I had tonsils and a sore throat, I took some antibiotics that were prescribed to me earlier, but now I have an itchy and dry throat with tonsils, and a lot of coughing at night while sleeping, and some during the day

You seem to be suffering from post infectious cough which is common type of dry cough syndrome after an attack of viral upper respiratory tract infection. Usually it will resolve on its own within few days. You can use dry cough syrups, strepsils like lozenges and steam inhalation for faster recovery
