My mother who is 67 yrs old had just one cycle of Chemotherapy and then Doctor said to stop.. It has been 2 months since that..
Now can she start eating properly washed fresh fruits like apples, pomegranate and kiwi? And Raw vegetables like onion and tomato salad, carrots and beetroot? Please Reply?
She feels fine.. Can she? Or should I continue the boiled food routine?

Yes you can start ..
Give her balance diet ..
Now you can give seasonal fruits and vegetables
Also give her soup
to boost immunity you can give her almond milk and golden milk

Yes you can start giving her normal diet. Give her fresh seasonal fruits and vegetables. She can have steam carrots and beatroots. Make tomato /vegetables soup for her.
Food should be easy to digest and freshly prepared. She can have dal, subzi, roti, khitchri, Dalia, rice. Avoid spicy food.

Avoid raw food & give cooked food more. As the cooked food is quite easy to digest.

Start a normal diet.
In raw salad carrot is ok, beetroot is ok, cucumbers is ok
Tomato can be given in gravy or soup.
Clear vegetables soup can also be given
But more focus on high protein with low fat
