Hello good morning, Hope you will be fine now. About the cooking oil, the mustard oil is a good for cooking purposes. But other than mustard oil you can use coconut oil, ghee and also Olive oil. All are good. Olive oil is good with Omega 3 fatty acid no doubt, but it's not  good to use for cooking puroses. You can use only while garnishing and seasoning the foods. Canola oil also has Good quantity of nutrient so you can use the best way to use oil for cooking purposes in rotation. The use of oil in rotation about 3 months minimum. Like, if you had mustard while for cooking and use it for 3 month after 3 monts you should change it by Sunflower oil,  mustard oil, coconut oil peanut oil Soya oil ghee in your choice. But it's totally depends on your digestinility coefficiency too.

Hi, Using oil on rotational basis like like within 15 days or in a month, for deep frying use mustard oil, Try to avoid oils in refined form instead can have cold pressed one. if you are using Olive can check its quality, whether it's pomace or Virgin/extra Virgin.

Olive oil(extra virgin/EVOO) has a good omega 3:6 ratio , less saturated fat and good omega 9 component mustard and canola have a good composition too Rotating oils and consuming different oils in permissible quantities is recommended. Oils if heated to a high temperature multiple times for prolonged period can increase the trans fat content .
Health Tips
IMHO olive oil ( EVOO) and mustard
