I have a problem where if something stresses me out too much to the point of crying or choking back tears, my throat and tonsils immediately swell up and I get sick with an infection. Within a few days I have to go to a hospital to get antibiotics for my infection. It gets very hard to breathe and the swelling does not go down once it starts no matter how much I rest. It looks and feels like strep throat and it only immediately follows a stressful or mentally traumatic event. How to stop it?

Tonsils do not get increased in size usually because of stress. As per ur description of ur condition in your age is because of chronic tonsilitis. A short course of antibiotics will help the acute exacerbation, but Tonsillectomy would be the final answer to end this repeated infections.
