I experience sudden episodes of digestive issues, extreme fatigue and either sleep too much or can't sleep at all. Especially when I'm stressed like for example during exams it worsens. I pass semisolid stool almost all the time now and it gets worse if I eat oily or processed food. I've never had digestive issues earlier, I was a heavy coffee drinker but now I can't have it without having diarrhea. I feel increased heart rate, dry mouth, bloating and brain fog. My appetite greatly increases. I become unaware of my surroundings and can't do simple cognitive tasks. I feel there's also slight slurring in my speech. I've started taking econorm sachets but still experiencing this issue, is this something I should be worried about or just digestive problems that can be fixed by eating healthy?

Seems like u r in extreme stress.. All these symptoms are stress induced.. Consult a psychologist or psychiatrist for counselling to get into the root cause of ur problems..
Need to change your food and
Drink plenty of water
Eat more green vegetables and fibre rich diet
Take proper sleep
Avoid carbonated and caffeinated drinks
