Will sinus surgery make your nose look bigger/wider ? And for how long ? Is there a way to make your nose look thinner ?

That depends on your surgeon's skills and training. I do packless nasal surgery. No bandages at all! My patients breathe from the nostril once they are out of anaesthesia! My endeavour is to always give my patients a functionally and structurally better nose than before surgery which is why I am more popular among female patients.
