First of all, you have to know whether she can concieve after her therapy is completed. And later on, if she's able to conceive, we must need to know if she has inherited the disease. If she has cancer family history and the disease type is indicative to be inherited, then she has to undergo genetic testing. If your wife comes up with a inherited genetic error, then your child will have 50% chance of inheriting the same error. In that case, if you are planning for second, we would like to recommend you to go for Pre-natal genetic diagnosis and your first child should also be cheked for the same error after her/his puberty. However, having a genetic error doesn't confirm the disease e(Note: Very rarely head&neck cancers are inherited)xpression.
