Muscle gain
I am underweight, haemoglobin deficient, and lactose intolerant. I am trying to gain weight by eating beetroot (chukandar) everyday- around 300-350 gms. Am I doing the right thing? Can I increase the consumption to 1 kg/day?

Only eating beetroot will not help you much. It will help increase the blood hemoglobin level. For which I would advise you to take one tablet orofer XT once they leave for 2 months. To gain weight you should I take advice from your dietitian since you should avoid gluten. I can suggest you to take whey protein mixed with milk since its pure way you do not need to worry about gluten. Where is derived from dried cheese (paneer) water. It helps gaining muscle bulk but works slowly so to obtain results it will take around 3 to 5 months.
