Just need to know ayurvedic perspective or pros & cons of not eating Millet roti but making a Millet chila using liquid dough of one millet at a time per day i.e jowar, Ragi, Bajra etc. Is it healthy & ok or it is necessary to make a roti only out of these millets??

Ayurveda shares different Guna by different procedures it's effects on body is also different.

It's must be sun dried and stored for at least a yr to nullify it's kled bahulyam.
When u make flour or just boil it shows different Guna
In same way u may note some Guna difference in Roti n chilla as it's water content n roasting is different.
I.e. chilla is good for pitta n Vata pradhan prakriti n doshik vyadhis but
Rotis good for Vataj n kafaj prakriti n doshik vyadhis

You can eat both, just see for oil , don't use too much oil and on a daily basis I won't recommend you to have something with oil, because it's kind of fried food when you make chila.
No it is ok to use one millet and time in roti or chilla. You can either make roti or chilla. Just consider your digestive system. If chila is not causing bloating it is fine
