Usually a surgery for fissure in ano will take time to heal. May be 1 week to heal completely. But with good analgesics you should be fine in a few days and will be able to do day to day activities. There is always risk to getting a surgery done but usually the risk of not having stool control (incontinence) is very less and is safe.
Next Steps
Talk to your surgeon again about all this and ask him to explain the exact procedure you will be undergoing and its risk and benefits.
