Sticky carbohydrates ( chocolates) are not easily removed from the teeth by themselves. ( They are not self cleansing). When the sugars stay in touch with tooth for long, the bacteria in the plaque/ mouth grow over them leading to acid production . This acid lowers the pH of the saliva and softens the tooth enamel. ( Demineralization and dissolution of hard structure of the teeth) This leads to tooth sensitivity , decay / cavities. Coming to your chocolate intake, if 10% of your daily calories come from Carbohydrates/ sugars, it’s ok. More than this is not good for oral and general health. Sleeping after eating chocolate ensures stagnation/ pooled saliva can aid in providing growth conditions for bacteria to colonize. And produce acid that harm the teeth .

Rinse after every meal. If possible, use toothbrush with/out tooth paste after having chocolate, to remove the par sticking to your teeth.
