As your gastro correctly said, IBS could be due to chronic anxiety and since you understand it is there from past 3 years, it is going to take some time to resolve. A Psychologist will have go through your detailed history to find out the exact reason for your anxiety and then slowly help you resolve it. And all this requires quite a few sessions.
Next Steps
keep continuing the medical treatment as prescribed
Health Tips
look for a good Psychologist and trust him for a few sessions, things will work out

I can understand the pain you go through. Like every other specialist mentioned, it could be due to Anxiety. It's sad that you couldn't get a solution all these years. Probably, You can have a session with a therapist and discuss in detail. They might be of some support which comes from a different perspective. You can always count me as one among them.
