Well frankly speaking I see no objection or any complications why you can’t have chicken & coconut water together but what matters the most is which one you are consuming at first & which one you will consume later

Always have fruits & high water content foods on empty stomach so ideally coconut water must be drunk at first followed by chicken curry or chicken preparation with rice/chapati/pulao ensuring that the quantity of carbs are lesser & chicken portion is comparatively more ensuring to add in some salads /sabji for that extra kick of fiber
