Mind is not quite responsive as normal
My mother has suffered from infact and hammoriage last year dec. Since then she has regained somewhat strength in her body but her mind is not active and responsive although she remembers everything. But answering only when asked and takes time to understand things.

Post infarct it takes time to recover from the weakness in the body and that could be the reason for her delayed response. Another situation that arises post infarct is Post stroke depression which is common too.

Consult a Psychiatrist who will examine her Mental status and confirm it.
