RCT, is three step procedure to save your tooth . It depends on the pathology /problem that is being diagnosed by your dentist keeping in mind the clinical signs and symptoms, also correlating the radiographic images which will decide the number of sittings for the total treatment.
Procedure can be completed on the same day or in 2-3 sittings depending on the condition of the tooth

Yes, a cap/crown is required after root canal treatment because the tooth loses its strength and becomes brittle thus becoming prone to fracture.
Hence it needs a crown for reinforcement .
Diet can be continued as regular, only advise would be to consume less acidic and sugary substances to prevent decay of other teeth.
Rinse your mouth /brush atleast an hour after consuming acidic substances or chew on hard cheese or sugarless gum to increase salivary flow to wash away acidic environment.
