Calorie deficit

I've recently been on a cut, thinking i was taking in 1200 calories daily. i calculated, apparently my coffee was 1300 calories, so, yeah, i was actually around 2,000. either way still losing weight. so i stopped the coffee for 2 days, ate 1600 cal of real healthy food, maintained the same cardio routine. but over those two days i gained 2 pounds back. what gives? 2,000 calories i lose, 1600 i gain?
