1 week ago I got stuck in the knee by a Saguaro cactus thorn was able to pull all of it out. Now my knee is swelling gets real stiff and very painful if don't flex it often

It is likely that you may have got infected. I would advise you to go to the ER so that you can be examined and undergo the necessary investigations such as CBC, etc. to fin the underlying cause and have it treated. You will require a Tetanus injection if you haven't had it over the last 6 months. You will require antibiotics, antacids, antihistamines and a topical antiseptic. Apply ice over the area so that the swelling reduces.
