Hi Is Panta bhat( fermented over night cooked rice) has very high vitamin and minerals compared to cooked rice?Also I read on internet -> When the conditions of preparing panta bhat — keeping rice soaked overnight in water — were simulated in the laboratory, the rice was found to be inoculated with veratridine a steroid-derived alkaloid.So is it safe to eat and good for health?

Hi Yes definetly you can consume that rice which is kept for soaking overnight in water... A third type of fibre called Resistant starch is developed from it during overnight fermentation....and good gut microbiota is also developed during the process... So you can definitely go ahead and consume that rice by adding buttermilk or curd to it... it’s highly nutritious and satisfying and gives a feeling of fullness called satiety...

Cooked rice soaked in clean water  with little  salt for 10 to 12 hours and usually consumed  as breakfast is supposed to be a rich source of probiotic or healthy gut bacteria as it has fermented ,this is supported by recent small studies ,but mega studies are still going on whose results  are yet to be published.
