My throat used to get quite sore in summers when I used to eat ice creams or cold drinks. The symptoms included Trouble in swallowing saliva or food or water. And constant pain. The problem is so severe now that even one sip of cold water now causes extremely bad sore throat. How can I over come this.

You seem to be suffering from chronic tonsillitis which usually presents with recurrent attacks of throat pain and difficulty in swallowing. During acute attacks you need to take antibiotics and painkillers along with antiseptic mouth gargle. If problems are very recurrent then surgery known as tonsillectomy may be required
Next Steps
Consult nearby ENT specialist for confirmation of diagnosis and appropriate treatment if required
