In case the decay was deep then slight sensitivity after composite filling is normal but it should decrease and ultimately disappear or go away within a couple of days. Give it a week or so in case you feel that the sensitivity or symptoms are increasing you will have to visit your dentist and get it properly checked.
Your second query regarding the nerve of the truth so basically the nerve of the truth is known as pulp and yes while doing root canal treatment sometimes it is possible to take out the pulp in toto and that is actually visible to the naked eye
