Emax would definitely be the better choice when it comes to strength and durability as compared to Empress 2. Empress 2 was considered to be more esthetic initially but we get equal results if not better with Emax as well. The esthetics mainly depend on the skill of the lab technician and the expertise of the clinician. Emax doesn't change color at all, once bonded onto the tooth.
