As you prepared the exercise plan, it is quiet good, you can opt for plan 2, but do focus on taking healthy diet daily and drink lot of water pre and post exercise.
Depends on how long you have been gyming.
3 rests in between may be bit much. 2 would be reasonable. Alternatively pick up another pool based work on 1 of those rest days.
So the answer is, it depends. But atleast 2 rest days including Sunday is ideal for recovery in between.
